“Handtertjie” recipe

Yesterday a lady called Retha asked if I have a recipe for handtertjies.  I do, and it is one of my favourites! 

Here is the recipe, and remember to use apricot jam!  If you are in England, I know, you all love strawberry jam, and it will work just as well.  Choose the one you prefer and off you go…

Ingredients:
1/2 lb butter (margarine is also fine, but the butter gives it a nicer taste)
2 cups of flour
1 teaspoon of cream of tartar
‘n pinch of salt
1/2 cup of ice cold water (just enough to bind)

Method:
1. Use you fingers to rub the butter in with the flour, salt and cream of tartar. (It is easier to freeze the butter and grate it in!)
2. Mix the water and fold in with a knife..
3. Bind the dough, cover with a cold wet cloth and leave in the refridgerator for about 30 minutes.
4. Roll out the dough and use a round shaped cookie cutter.  Place one or 1/2 teaspoon of jam in the middle and fold over, making a half moon.
5. Press around the outside with a fork.
6. Smeer milk on the top and bake in a pre-heated oven at 200 degrees celsius for about 15 – 20 minutes, until light brown.

Eat and enjoy!

    Hi

    I came across your website while doing a search for a recipe that my grandmother used to make.

    I remember her making up a batter (like pancake batter I think) then spooning that into muffin pans with a spoonful of curried fish in the middle. She baked it in the oven. Do you perhaps know the recipe?

    Hi lizel, thanks for a wonderful blog… I am desperately trying to find a receipe for Guava tart, this is using guavas, cream cheese and I think cream on a base of cake…whilst moving to the UK, I lost a book that a put together will all my favourite receipes, so am now lost without out my “little bible book”…please could you help me out with this one

    I’m sorry to write only now, but I will post the guava recipe. My baby just woke up and wants some attention first so I will write a bit later.
    Have a good day…Moving to the UK will mean that you will experience lots of depressing days specially due to the weather, so good luck, and you will need as many SA recipes as you can get…
